Am a fan of Food Network channel and keep watching it whole day. I saw this recipe from The Pioneer Woman and I really liked it and found the recipe from her official blog. This was a really easy recipe I just changed the recipe by not adding the egg. I really don't know anything about Cleta Bailey Toffee Square other than what's written in The Pioneer Woman blog. I just know that it is really tasty and you guys should try this. And it is super easy!!! Ingredient 1. Butter - 1 stick (1/2 cup) 2. Brown Sugar - 1/2 cup (packed) 3. Vanilla - 1 tsp 4. All Purpose Flour - 1 cup 5. Chopped Chocolate Chips - 1 cup 6. Finely Chopped Pecan - 1/2 cup 7. Milk - 1/8 cup Method 1. Cream butter and sugar. 2. Add flour, vanilla and combine well. Add milk to make it into spreadable consistency. 3. Spread batter into a pan using spatula. I did by putting the batter in between 2 parchment paper and spread using a rolling pin. 4. Bake for 15 mins at 350 F. 5. Remove from oven and sprinkle chocolate chips and return into the oven and bake for 1 min more. 6. Take out spread chocolate and sprinkle chopped nuts over the cookie. 7. Cut into squares. 8. Pizza cutter is really good for cutting it into square.

I keep asking my husband - give me a challenge to make something. He surprised me by asking me to make a batman cake. I was like "WHAT!!!!". Then he told me, next week is Batman day. Then I searched for and found a Surprise Batman cake. Batman was inside the cake and I was amused and wanted to try that technique. And here I am with chocolate and lime cake. There are different ways to make the contrast. You may use your own vanilla and chocolate cake. Or just make a simple vanilla cake and add a black food color. Either technique will give you the same result. Here I am making a lime cake and a chocolate cake. Hope you guys will try and surprise your family and friends like I did. Ingredients Batman 1. Flour - 175 gms 2. Eggs at room temp - 4 3. Vanilla Essence - 1 1/2 tsp 4. Baking Soda - 1 tsp 5. Water - 1/2 cup 6. Sugar Powder - 250 gms 7. Butter, room temp - 225 gms 8. Baking Powder - 1 tsp 9. Cocoa Powder - 50 gms 10. Curd - 1/2 cup 11. Black Gel color a little Method
Notices Curd is optional. Cake will be more moist, but last for a max of 3 days. How to make Batman 1. Once the cake is cool freeze for 10 mins. 2. Using a batman cookie cutter or homemade batman template (which I used :-). My cookie cutter was bigger than the loaf pan. You should try keeping the cutter inside the loaf pan and check whether it will fit inside the pan or not. 3. It is easy to cut when it is frozen. 4. Cut the cake using cutter/knife and make batman out of your chocolate cake, like you see in the picture. Lime Cake 1. Flour/ All purpose flour - 2 1/4 cups 2. Granulated Sugar - 1 1/2 cups 3. Baking Powder - 2 tsp 4. Salt - 1/2 tsp 5. Butter - 1 stick ( 1/2 cup) + for buttering the pan 6. Heavy cream/ whole milk - 1 cup 7. Vegetable oil - 1/4 cup 8. Large eggs - 3 9. Lime juice - 1 tbsp 10. Lime Zest - 1 tbsp 11. Yellow color and lime essence a little (optional) Method
After a hot day, a good cold coffee will cool you down. We don't coffee much, we are Chai people! But this cold coffee recipe is really good. Its not too heavy. Its light, refreshing and made with very few ingredients which will be in your pantry. Serves - 4
Ingredients 1. Instant Coffee powder - 4 tbsp 2. Full fat milk (cold) - 4 cups 3. Sugar Powder - 1/2 cup - 3/4 cup (according to your taste) 4. Ice cubes - 5 - 6 nos 5. Chocolate sauce and whipped cream for decoration Note : You can freeze the milk and skip the ice cubes. Method 1. Combine instant coffee and lukewarm water. Water just little to dissolve coffee powder. 2. Combine milk, coffee mixture, ice cubes and sugar in a mixer and blend until smooth. 3. Serve with chocolate sauce and whipped cream. I just love making bread and this time am making Challah bread. Challah bread is a special Jewish bread, usually braided and typically eaten on ceremonial occasions such as Sabbath and major Jewish holidays (other than Passover). Ritually-acceptable challah is made of dough from which a small portion has been set aside as an offering. Apart from the love of making bread there is no other reason for me to make Challah bread. This was my second try and this time it came out well. It is very rich bread made with eggs yolks, sugar etc. Threading is bit tricky. But going through a video will help. Here is a video that helped me. www.youtube.com/watch?v=6zqEzXjXIbo Serves - 1 loaf Ingredients 1. Yeast - 2 tsp 2. Lukewarm water - 1 cup 3. All purpose flour - 4 cups - 4 1/2 cups 4. White granulated sugar - 1/4 cup 5. Salt - 2 tsp 6. Eggs - 2 large 7. Egg yolk - 1 ( reserve white for brushing) 8. Oil - 1/4 cup Method 1. Dissolve yeast in lukewarm water with a pinch of sugar. Leave it for 10 mins. Until it start fermentation. If it does not form up after 10 mins, you have to start over. 2. Mix all the dry ingredients, flour, sugar and salt. 3. Add eggs and oil to the flour mixture. 4. Mix in a stand mixture with dough hook attachment, then add yeast mixture. 5. Mix for around 6-8 mins. Then knead on a floured surface for another 10 mins, until it reach a smooth dough. 6. Transfer into a greased bowl and cover with plastic wrap or damp cloth, place in a warm place until the dough rise double the size around 2 hours. 7. Knead the dough again and divide into 6 or 3 equal portions. Thread the dough and leave in warm place again for 1 hour. 8. About 20 mins before baking brush the dough with egg white. You can also top with sesame seeds. 9. Preheat the oven for 350 F. Bake for 30 - 35 mins or until the top turns brown in color. 10 . Cool completely and serve.
There will be very few Indians who doesn't know about Pav bhaji. Being from Kerala I didn't have many opportunities to try street Pav Bhaji. After marriage, when one of our friends came home, we tried making Pav Bhaji at home using store bought buns. Since I have never had one, I was really curious to try. My husband and was leading the bhaji section as he knows the taste. Am not a real fan of Pav Bhaji, may be because I never got a chance to taste authentic Pav Bhaji taste. I hope one day I will get a chance and will change my option about Pav Bhajis. But I can tell you guys, now am a real fan of these Pav Buns. These are really soft and buttery, Homemade ones are really good. I like making small buns once, which I just have like a snack with tea. I can assure you that once you make these Buns, you will never go buy store bought buns. Ingredients 1. Maida/ All purpose flour - 2 cups 2. Milk - 3/4 cup + 1 1/2 tbsp 3. Butter - 1 1/2 tbsp + 1/2 tbsp 4. Salt - 1 tsp 5. Instant Yeast - 2 tsp 6. Sugar - 1 tbsp 7. Milk Powder - 1 1/2 tbsp 8. Milk & Butter for brushing 9. Flour for dusting 10. Oil for greasing Method 1. Lukewarm milk. You can test by dipping one finger in the milk. You can still feel its slightly warm and you will be able to bear the heat. That is the optimal temperature. 2. Add Sugar and yeast to the lukewarm milk. Keep it aside for 10 mins. You will see the yeast start fermenting. If that doesn't happen, you will have to start over again. 3. Mix the dry ingredients together. Mix flour, salt & milk powder. Note: I didn't have any milk powder so I just skipped it. 4. Mix in the yeast mixture with the dry ingredients 5. In a stand mixer, with dough hook attachment mix for about 5-8 mins. The dough will be sticky. 6. Add butter in between and keep mixing. 7. Transfer into greased bowl. Cover with plastic wrap or damp cloth and keep in warm place and rest for about 1 - 1.5 hours. 8. It will double in size. Punch down and knead on a floured surface for a few mins until it turns a smooth dough. 9. Divide into 16 equal portions. Place on a greased pan. 10. Cover and rest in a warm place for another 45 mins. 11. Brush the buns with (1 1/2 tbsp of milk and 1/2 tbsp of butter) milk and butter mixture. 11. Preheat oven for 200 C/ 392 F. 12. Bake for 15 mins or until the top turns brown. 13. Take our and slightly brush again with milk butter mixture. 14. Cool completely and serve.
Puliyinji became one of my favorite side dishes from the hostel. One of my friend use to bring Puliyinji from home and it was so tasty. Puliyinji helped us survive from worst hostel food. It usually won't last for more than 2 days. It was not really a side that my mother used to make during Onam. But when I started to make Onam sadhya it was a must side dish for me. It has a sweet and sour So am posting this recipe so that you guys also try and decide whether to making this for next Onam or not. So try this recipe and enjoy with your family. Ingredients 1. Finely chopped ginger - 1/2 cup 2. Finely sliced green chillies - 3 or 4 3. Jaggery - 3 or 5 pieces 4. Tamarind - lemon size 5. Turmeric powder - 1/4 tsp 6. Red chilly powder - 1/2 tsp 7. Uluva powder - 1/4 tsp 8. Oil - 1 tbsp 9. Salt to taste 10. Water as required Seasoning 1. Oil - 1 tsp 2. Mustard - 1/4 tsp 3. Dry Red chillies - 4 or 5 4. Curry Leaf - 1 string Method 1. Dissolve tamarind in 1 cup water and extract the juices. I used concentrated tamarind paste about 1 1/2 tbsp. 2. Heat 1 cup water and dissolve the jaggery and filter the syrup. 3. In a small sauce pan combine both tamarind and jaggery, and bring to boil. Ajust the sweetness and sourness according to your taste. 4. Continue to simmer the sauce until it reaches a thick consistency. 5. In a pan add oil and fry the ginger and green chilles until it turns golden brown in color. 6. Reduce the heat and add turmeric, chilly powder and add the jaggery and tamarind syrup. Mix for 2 mins.
7. Sprinkle uluva powder. 8. Finally add the seasoning. Growing up, my mother used to make Ulli Theeyal for Onam. I don't remember when I made them last. So I thought of making it for this Onam. My husband enjoyed it, so did I. It reminded me of my childhood Onam. The taste also came close to my mother's cooking. Ingredients 1. Shallots - 200 gms 2. Red chillies - 5-6 nos 3. Grated coconut - 3/4 to 1 cup (I used dry coconut) 4. Coriander powder - 1 1/2 tbsp 5. Tamarind paste - 1 small lemon size or Tamarind paste (Concentrated paste) - 1 1/2 tbsp 6. Coconut oil - 2 tbsp 7. Mustard Seeds - 1/2 tsp 8. Curry Leafs - 1 string 9. Salt to taste Method 1. Fry red chillies, coconut until coconut turn brown in color. Then turn off the heat and add coriander powder and turmeric, and immediately transfer into another bowl or grinder. Otherwise it will get burned within the pan. 2. Grind into a smooth paste and keep aside. 3. Soak tamarind in little water for a few minutes and sieve out all the seeds. I used store bought concentrated tamarind paste. you can add more or less according to your taste. 4. In another pan, heat oil, add mustard seeds, curry leaves and onion. Saute until onion turns brown. 5. Now add the tamarind paste and cook for 5 mins. If using concentrated paste, add little water. 6. Now add the ground coconut paste and 3 cups of water. 7. Now add salt and stir well. 8. Boil until gravy reaches the desired thickness. Notes :
1. For this recipe I used Dry coconut. You can use fresh coconut. The only difference is that dry coconut turns brown faster than fresh. 2. I used store bought concentrated tamarind paste. If using concentrated tamarind paste just add a little water and dissolve the paste. I find using concentrated paste more easier than normal tamarind. I always get hungry staying home all day. So I thought of making some healthy snack, which i can eat without feeling guilty. I was searching for healthy snack recipe and saw granola bars. Am not a big fan of granola bars, but since I had most of the ingredients already available in my pantry for making it, I thought I could give it a try. But it turned out to be very crunchy and tasty. Both me and my husband enjoyed it. This was our energy bar in couple of our trips. Ingredients 1. Oats - 2 cups 2. Shredded coconut - 1/2 cup (I used fresh) 3. Sliced Almonds - 1/2 cup 4. Wheat Bran - 1/2 cup 5. Honey - 1/2 cup 6. Brown sugar - 1/4 cup 7. Virgin Coconut Oil - 3 tbsp 8. Vanilla essence - 1 1/2 tsp 9. Salt a pinch 10. Chopped Walnut - 1/4 cup 11. Pumpkin seeds + Tutti fruity - 1/4 cup Note: Granola bars are made of rolled oats, nuts, honey or other sweeteners such as brown sugar, and sometimes puffed rice, that is usually baked until it is crisp, toasted and golden brown. So feel free to use variety of assorted nuts and similar sweetening agents which is already present in your pantry. Use according to your preference. Method 1. Preheat oven to 350 F. Toss oats, wheat bran, pumpkin seeds and coconut for 10 -12 mins. The rest of the nuts were already roasted. If the nuts were not roasted, add it along with the oats. 2. Stir occasionally. 3. Add the rest of the nuts and tutti fruity into the oat mixture. 4. In a sauce pan, add honey, oil, sugar and heat until the sugar and oil are melted. Remove from heat, add salt and vanilla essence. 5. Mix sugar and oats in a bowl. Mix until, oats are coated completely with sugar mixture.
6. Grease and layer the pan with parchment paper with long end, so that you can pull it out when it is baked ( as shown in picture). 7. Pour into greased square pan. Press the mixture into pan on all corners using a flat bottom bowl or anything you have. 8. Bake in 350 F for 20 -22 mins. 9. Cool completely and cut into any shape you want. |
