Devil's food cake is one of the basic chocolate cake. It is considered a counterpart to the white or yellow angel food cake. It is difficult to qualify what distinguishes devil's food from the standard chocolate cake, though it has more chocolate than a regular chocolate cake, making it darker. The cake is usually paired with a rich chocolate frosting.
It is very easy to make with basic equipment. Every baker should have a good devil's cake recipe handy. This recipe was in my recipe book for quite some time and recently thought of trying it. So here it is.
Ingredients
For cake 1. Flour - 3/4 cup 2. Cocoa powder - 1/4 cup, good quality 3. Baking Soda - 1/2 teaspoon 4. Salt - 1/8 teaspoon 5. Fine Sugar - 3/4 to 1 cups 6. Vanilla essence - 1/2 teaspoon 7. Egg, slightly beaten - 1 8. Milk - 1/4 cup 9. Strong Hot coffee - 1/4 cup 10. Butter - 1/4 cup, room temperature Method 1. In a Bowl, sieve all the dry ingredients flour, baking soda, cocoa powder, salt, and sugar. If sugar is not super fine no need to sieve just add to the flour and whisk well to combine well. 2. Add room temperature butter and with a mixer or fork mix at low speed, until it turns into breadcrumbs like texture. 3. Add coffee, milk, and vanilla to the flour mixture. Mix well 4. Now add slightly beaten egg and mix until well combined. 5. The batter will be pourable. 6. Pour into a 7 inch greased pan. 7. Bake at 350 F for 30 - 35 mins. 8. Cool in the pan for 10 mins and invert. Cool completely. I like to wrap the cake with plastic wrap and refrigerate, so it will be easy to cut without cake crumbling. Fudgy Chocolate icing It's basically a ganache mixed with sour cream to cut down on the sweetness 1. Semi-Sweet chocolate - 1 cup (6 oz) 2. Whipping Cream - 3/4 cup 3. Sour Cream - 1/4 cup 4. Vanilla essence - 1/2 teaspoon 5. Salt a pinch Method 1. Melt chocolate and cream using a double boiler or in a saucepan over medium-low heat. Be careful not to burn the chocolate. 2. In another bowl, combine sour cream, vanilla, and salt. 3. Whisk until smooth. 4. Now add the room temperature melted chocolate into sour cream and whisk well. If it looks very loose, refrigerate it for few minutes. It will become thick. Assembling 1. Take the cake out of the refrigerator and cut into equal half. 2. Spread an even layer of icing on one layer of cake. 3. Place the other layer of cake over the icing. 4. Now cover the cake with icing and decorate as you like.
